The History of Smokey Bones

Beginning in 1999, Smokey Bones coupons for discounts on meals, free appetizers or kids meals began showing up in the Orlando area newspapers and advertising mailers. Advertising succulent fall-off-the-bone ribs, slow cooked brisket and skillet cornbread appetizers, the new Darden Restaurants brand was off to a great start. The restaurants appealed to those in search of a sit-down meal served in a comfortable atmosphere at a reasonable price and soon other locations popped up throughout Florida. At its largest, the family-friendly chain had more than 120 locations in 28 states.

Diminishing sales and the inability to take the chain national prompted its sale in 2007 to a Sun Capital Partners affiliate. Shortly thereafter, the new owners, Barbecue Integrated Inc., launched a campaign to turn the restaurants around. The original Smokey Bones Barbecue & Grill featured a log cabin atmosphere with a twist. The twist was the numerous televisions placed throughout the dining area and bar with volume controls at the tables. Although some patrons liked the feel of dinner in front of the TV, for many, especially those with younger children, the televisions proved to be a distraction and interfered with their dining experience.

The new look, introduced in the Florida market in 2009, relegates the televisions, now wide-screen, to the bar and keeps the dining area focused on the food. The country lodge theme has been replaced by a more contemporary decor that better represents the restaurant chain’s new name and primary market, Smokey Bones Bar & Fire Grill. The rebranding effort and the change in emphasis from barbecue to the bar business has been an early success, which is reflected in the steady increase in sales for the locations that have received the face lift. Barbecue Integrated plans to incorporate the updated look throughout the brand.

Although the focus is now concentrated on the bar, the menu has not suffered. Customers can still enjoy the signature slow cooked barbecue and fire grilled steaks along with and several new favorites. Fire starters include beer battered mushrooms, chicken chili nachos and a variety of sliders featuring pull pork, fire grilled hamburger, and spicy buffalo-style chicken. A few of the standbys like the chicken fried chicken are no longer on the menu however, there are a host of other full of full-flavor appetizers, salads, sandwiches, steaks and burgers to choose from.
